These are made with leftover pork! So if you’ve made some pork (chops, slow cooker, whatever), reserve some for this. HERE is the way we love making slow cooker pork. It’s incredible.

In addition to the meatballs, I made some tzatziki sauce to go with them! They tasted great alone and dipped in the sauce!

GREEK PORK MEATBALLS
6 months+, Makes about 10

Ingredients (for the meatballs)

  • 1 cup shredded cooked pork
  • 1 tsp lemon juice
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • 1 tsp melted coconut oil (to bind)
  • pinch of salt and pepper

Directions

  1. Heat a little oil or butter on medium heat in a skillet.
  2. Purée all of the ingredients.
  3. Use your hands to form the meatballs and place them directly into the skillet.
  4. After 2-3 minutes, rotate each meatball. Continue to rotate for about 10 minutes, so each “side” (I mean, technically they should be round, and round things don’t have sides) is just slightly browned.
  5. You can also bake these: 400 F for around 20 minutes!

Ingredients (for the sauce)

  • 1 cup whole milk yogurt (or Greek yogurt… go figure!)
  • 1 tsp lemon juice
  • 1/4 cucumber, chopped finely
  • pinch of fresh dill
  • pinch of salt

Directions

  1. Just put all of the ingredients into a bowl and stir!
  2. For a thicker sauce, press the yogurt through cheese cloth or a nut bag before mixing in the rest of the ingredients.

You can serve the meatballs with some strips of tomatoes.
