If you’ve been following me on Instagram or Snapchat for any period of time, you’ll know I’m pregnant and due in the next 2 weeks. I had planned, for months, to do some freezer meal prep sessions but just didn’t feel like it. I either didn’t feel like putting together the ideas or I didn’t feel like actually doing all that chopping. I love cooking, but prepping a bunch of meals at once hasn’t been that enjoyable for me in the past.
Here’s a short video that’s a time lapse of the entire 4 hours of cooking plus clean-up. For me, cleaning up is just part of the cooking process, so any moment I have a spare minute or two, I clean up a little!
A surprisingly tasty combination.
I love a one-skillet dish, but I don’t usually make things like that. I was pretty excited to come up with this one! You technically need one skillet, one cutting board, one knife, one vegetable peeler, and one spiralizer. You can use a bowl if you want, but that’s not 100% necessary.
I have to explain why I would share a video like this. Because otherwise it’s odd. Trust me, it’s way more weird to ME to watch myself cooking a meal. Side note, I have got to work on my posture. And our kitchen does not normally look this clean. I just so happened to clean the day before. Otherwise you might have seen the true me….
There isn’t much of a recipe for this!
Start with puff pastry, roll it out, spread some marinara sauce, sprinkle some cheese and whatever toppings you like! For this video, I used leftover shredded chicken and baby spinach. Roll up your pastry, slice it into 15 (approximately) pieces, and bake them for 25 minutes!
